This vegan alfredo sauce is perfect to add to any dish such as chicken, spaghetti squash, veggies or potatoes.   It’s cashew-based which provides a rich & creamy flavor that is so savory, no one will even guess that it is healthy!  

  • 1 cup raw cashews, soaked overnight, drained and rinsed

  • 3/4 cup water

  • 2 garlic cloves, peeled

  • 1/2 tbsp lemon juice

  • 1/2 cup diced onion

  • 2 tbsp nutritional yeast

  • 1 tsp salt

  • 1/4 tsp dried rosemary

  • 1/4 tsp black pepper

  • After the cashews have soaked overnight (or at least 6 hours), drain and rinse them.

  • Add the cashews and all other ingredients to a high-powered blend and blend until smooth.

  • Use immediately in a recipe or store in a sealed container in the fridge.

  • If using a day or two later, can thin out the sauce with chicken broth. Enjoy!
