1 egg or egg white equivalent (add more egg whites for larger volume)

 

1/2 large ripe banana mashed

 

1 Tbsp all natural peanut butter (or almond butter)

 

Optional- 1/2 scoop protein powder (vanilla or banana are my favs!) to increase protein and give a more "pancake like" consistency (easier flip!)

 

Mix all ingredients together in a bowl. Pour ingredients into frying pan (with nonstick spray) and cook a few minutes on each side just like a pancake

Top with extra banana slices & cinnamon.  Can eat with pure maple syrup, or nut butter spread. Enjoy!
