Egg muffins are GREAT to make ahead of time and have on the go!
Directions: Spray muffin tin with PAM or Olive Oil and in a separate bowl, scramble 12 eggs. Pour the egg mix into the tin – 12 eggs, 12 muffins so eyeball it. Then add in all your favorite veggies or lean meats (examples: spinach, peppers, onions, turkey sausage etc.).
Bake at 350 for 15 minutes! Top with salsa or guacamole! Refrigerate or freeze if desired!
