Homemade Parmesan Cheese (Vegan)

Who doesn't love Parmesan cheese?  How about a healthy one!?  Yes please! 


I myself can't get enough of it, so I sought out a clean recipe that I can add to almost any dish or side.  My favorite is sprinkling it on roasted veggies, spaghetti squash, or cauliflower pizza.  I never thought a dairy free cheese could taste so good, and it's so easy to make! 


1 cup blanched almond flour

2 tsp dried oregano

1/2 tsp fine salt

1 Tbsp lemon juice


Preheat the oven to 350 F and line with parchment paper.   

Add the almond flour, dried oregano and salt to a small bowl and whisk very well.  Add the lemon juice and use a fork to press and mix for a couple of minutes until all of the almond flour is coated evenly.  It will clump so use your fingertips to rub the mixture between your hands into small meal crumbles. 


Once it is all even, spread out onto the pan.  Bake for just 5 minutes until the edges are turning golden brown.

Serve over any dish!  Store in fridge in a sealed container for up to a couple of weeks.  Enjoy!
