No Guilt Oatmeal-Raisin Cookies

Cookies for breakfast!?  Why not!   These cookies have no added/processed sugar, and they are filled with nutritious ingredients like bananas, oats, and peanut butter.  Totally acceptable for any meal or snack! 

(gluten-free if using gluten free oats)

  • 1/2 cup rolled oats

  • ½ large ripe banana (mashed)

  • 1/4 cup nut butter of choice (Recommend all natural salted peanut butter)

  • 1/4 tsp cinnamon

  • 1/2 tsp pure vanilla extract

  • 3 tbsp raisins (or other dried fruit, or even chocolate chips)

  • 1/16 tsp salt, plus a tiny pinch more if desired (taste dough to decide)

Preheat the oven to 350 degrees. Mash banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies and bake for around 14 minutes. This recipe yields ~8-10 cookies depending on the size you want them.   Double the recipe to make a bigger batch!
