ONE MINUTE PROTEIN MUG CAKE 

 

(low sugar, gluten/wheat free)

Since I am always looking for ways to add protein to my meals, I was SO excited when I found a mug cake that was high in protein and also tasted AMAZING!   It is gooey and so much fun to eat.  You can change up the protein powder for different flavors (which will also alter the taste), so see what works for your palate!  (I do not recommend whey protein powder as it is not great with baking).  You can also omit or substitute the egg for a vegan option, but it will be less fluffy. 

This takes less than 5 minutes to prepare and only one minute in the microwave!  


Ingredients
1 scoop vanilla or chocolate protein powder 

1/2 tsp baking powder

1 Tbsp granulated sweetener of choice (I use coconut sugar, can also try Monk fruit varieties) 

1 large egg (if omitting the egg, just increase liquid by ~ 2 Tbsp, or try the Neat Egg substitute

1/4 cup almond milk (or milk of choice)- can increase if batter is too thick 
1/4 tsp vanilla

Sprinkle of chocolate chips (optional)


Procedure
Grease a microwave safe bowl or mug with cooking spray and add the powder ingredients, mix well.  Add the egg and the rest of liquid ingredients, stir until thick batter is formed.  Microwave for ~ 60 seconds or until just cooked in the center.   Can add a topping of nut butter for a more decadent and delicious treat!  Enjoy!
