
Quinoa Cucumber Feta Salad
1 cup uncooked quinoa
1 seeded English cucumber- chopped
2 tbsp chopped cilantro
1/2 c pine nuts (or sliced almonds/cashews/nuts of choice)
Juice from 1 lemon
2 tbsp extra virgin olive oil
½ cup feta cheese (or more if desired)
Salt and pepper to taste
Directions:
Cook quinoa according to directions on package (In a saucepan over medium heat, combine quinoa and about 1 1/2 cups of water. Bring to a full boil. Cover the pot, and let the quinoa cook for another minute. Turn the heat down to very low and cook for 15 minutes. Remove the pot from the heat, and let it sit for 5 minutes with the lid on. Uncover the quinoa and fluff gently with a fork. Set aside to cool before mixing).
Spray skillet with nonstick spray- roast nuts in skillet a few minutes until brown.
Add chopped cucumber, cilantro, toasted pine nuts, feta, olive oil and lemon juice to cooled quinoa. Season with salt and pepper to taste.
*Can add more feta to increase flavor. I usually do not measure ingredients out perfectly, I just add them to desired taste!
*Can eat warm or serve cold for a great summer salad!
