THE BEST CAULIFLOWER MASHED

(Dairy Free!)

 

This is by far the best Cauliflower mashed recipe I have tried.  It is easy and so rich and creamy!  I like it better than regular mashed potatoes (and so does my husband, which is saying a lot!)   Paleo and Whole 30 approved!  

INGREDIENTS

  • 4 cups finely chopped cauliflower or one small head (or buy 1 bag of Cauliflower Rice to skip a step!) 

  • 2 TBSP Ghee or Coconut Oil ( I prefer Ghee for a buttery taste) 

  • 1/4 tsp salt (or more to taste)

  • 1 & 3/4 cups unsweetened almond milk (can add less if using less cauliflower rice)

INSTRUCTIONS

  1. Put cauliflower in a processor until small and rice like (or use store bought riced cauliflower)

  2. Place butter or oil into a large skillet on medium high heat and once hot, add cauliflower and cook for ~ 6 or 7 minutes or until cauliflower begins to turn golden in color.

  3. Add the almond milk and let cauliflower cook for another 10 minutes until there is no liquid in the pan (if leftover liquid you can always pour a little out, this can happen if you are starting with a smaller amount of cauliflower rice.

  4. Transfer mixture to a processor, or use a small  hand blender/masher to puree until smooth.  Can add herbs as desired!  Enjoy!
